The difference is the number of decibels (dB) in which the headphones are able to stay on the full frequency range (and therefore are able to ensure high sound fidelity). 

Impedance
  - is a value, expressed in volts / amps (ohms), which indicates the resistance exerted by the headphones on the audio signal. The higher the impedance, the better the sound quality, but at maximum impedances the maximum sound volume is reduced. For optimal listening, it should have the same degree of impedance on the headphones and the device from which it reproduces the sound (eg, smartphone or tablet). 

Sensitivity
- this is the value that is indicated by the sound pressure from the headphones expressed in relation to the applied voltage (2.83 volts listening at 1 meter distance). It is calculated in decibels. To make the concept as simple as possible, a higher sensitivity is equivalent to a higher maximum volume without sound distortion.

Noise cancellation - in-ear headphones provide a high degree of isolation from outside noise, but sometimes not enough. That's why there are more advanced (and expensive) headphones with active noise cancellation technology. Active noise cancellation provides complete isolation from outside noise, even in more "noisy" situations (eg air travel), but requires more energy and therefore increases battery consumption.

Sound quality - as well as evaluate the above technical parameters, before buying a pair of headphones should be interested about the type of sound they provide. There are, in fact, headphones that reward low penalties for other frequencies, others that provide a balanced sound on all frequencies and so on.
