In 1949 came the "chicken on the grill," the chicken in the coal in the Peruvian fashion, when a German engineer settled in Peru definitely perfected the rotary oven that has become popular worldwide. The special sauce based on black beer, huacatay, aji panca, rosemary, cumin and ginger, made this dish a "national patrimony" by the National Institute of Culture in 2004. Tio Aleco is a traditional chain of restaurants in southern Peru.
