Sometimes time moves too quickly. The sweetest, most precious things only last for a brief moment – part of what makes them so special. One of those fleeting beauties is the Riesling grape used for Negative 8 Icewine. Icewine grapes can only be harvested when the temperature is negative 8 or below. In a limited window of time, they are picked and pressed while still frozen. A process of making wine which man had attempted in Roman times, Icewine was not perfected until 1984 when it laid its roots in the Niagara region. Each frozen grape yields only a fraction of the wine a normal grape does, but that wine possesses a refreshing sweetness like no other. Luckily, this beautiful moment can fit into a bottle.
