Using HDR to create a more illustrative style, allowing the gritty aspect and almost "chrome" feel into photography. This helps the surreal "more then the eye can see" as the tones has been shaped by HDR. This can extravagant areas that's the eye wouldn't be able to see.

When taking HDR photos of people, they have to stay completely still and don't blink their eyes, or there will be ghosting effects. Many editing software can help eliminate ghosting, but may not always be successful. 
Depending on who the subject is, what their skin color is and how much HDR effect you want in the photo will effect the image directly when shooting portraits. 
HDR on skin it often look good  on old wrinkled, mainly old guys, due to the HDR effect will usually make their face look dirty, or here make the freckles really stand out from the skin tone.
