Client Brief
Born in Busan, a coastal city in South Korea, Chef Tae Hwan Ryu began his culinary career at a relatively late age of 22. Ryunique has respectively won 27th place and 79th place in the Asia’s 50 Best Restaurants and the World’s 50 Best Restaurants in merely 3 years of launching.

“Ryunique” is a combination of Chef Tae Hwan Ryu’s name and the word “unique” Chef Tae Hwan Ryu spent 8 years abroad in Australia, England, and Japan, learning and perfecting his French and Japanese cooking technique. Opening Ryunique in 2012, Chef Ryu has created 'Hybrid Cuisine', a unique blend of Japanese and French cooking technique, utilizing natural and unique Korean ingredients. Chef Ryu created a recipe that uses the natural and unique ingredients of Korean food by combining elements of French and Japanese food called 'Hybrid Cuisine'.
Concept Statement
The design concept of this fine dining restaurant is inspired by the signature dish of RYUNIQUE, which is 'Kimchi Dragonfly'. This dishes was made with the local produce of Korean ingredients with a French-Japanese technique. The Kimchi Dragonfly dish are made of kimchi, potato, and chestnut. The unique part of this dishes is it seek to replicate natural shapes and forms which is a DRAGONFLY. The chef uses kimchi as the wings of the dragonfly, gochujang (Korean sauce) as the eye, while the body and the tail part made from potato and it was placed on top of a pebble/stone. Therefore, the keyword that extracted from the signature dish are TRANSPARENT/TRANSLUCENT, VORONOI, and SLIGHT TWIST.

Transparent is taken from the characteristic of the wings which is transparent/translucent, which means it's almost see-through. This concept will be apply in terms of material, such as glass, glossy, mirror and etc. Voronoi is the pattern of the dragonfly wings, which is looks like a series of cells. This concept was taken for the sake of making a shadow into the space. Slight twist is taken from the philosophy of how the dragonfly flap its wing to fly. Thisconcept can be apply as a slight curves for the shape.
